Ingredients

  • 1 cup poha (flattened rice)

  • 1 medium onion (finely chopped)

  • 1 medium potato (peeled & diced) – optional

  • 2–3 green chilies (slit)

  • 1 tsp mustard seeds

  • 8–10 curry leaves

  • ½ tsp turmeric powder

  • 1 tbsp peanuts

  • 1½ tbsp oil

  • Salt to taste

  • Fresh coriander leaves (chopped)

Directions

  • Prepare the Poha Rice
  • Rinse poha gently in water 1–2 times until softened.
  • Drain completely and set aside.
  • Sprinkle a little salt and turmeric powder over the rinsed poha and mix lightly.
  • Tempering & Cooking
  • Heat oil in a pan.
  • Add mustard seeds and let them splutter.
  • Add peanuts and roast until golden.
  • Add curry leaves, green chilies, and chopped onions. Sauté until onions turn translucent.
  • Adding the Vegetables
  • Add diced potatoes and cook until tender (if using).
  • Stir in the softened poha rice and mix gently so the grains don’t break.
  • Finishing Touches
  • Cook for 2–3 minutes on low flame.
  • Garnish with chopped coriander and a squeeze of lemon juice.
