1 cup sabudana (tapioca pearls)
2 medium potatoes, boiled & cubed
2 tbsp peanuts, roasted & coarsely crushed
2 tbsp ghee
2 green chilies, chopped
1 tsp cumin seeds
Sendha namak (rock salt), to taste
Fresh coriander leaves, chopped
Directions
- Soak Sabudana
- Wash sabudana 2–3 times, then soak in just enough water to cover them for about 4 hours (or overnight) until soft.
- Prep the pan
- Heat ghee in a pan, add cumin seeds and green chilies.
- Add potatoes
- Toss in boiled potato cubes, sauté lightly.
- Mix sabudana
- Add soaked sabudana, rock salt, and stir gently on medium heat.
- Peanuts & flavor
- Mix in roasted peanuts, cook until sabudana turns translucent.
- Switch off the flame, add coriander and lemon juice. Serve warm.
