2 medium-sized sweet potatoes (shakarkandi) – boiled
1 tbsp ghee (or vrat-friendly oil)
1–2 green chilies – chopped
½ tsp cumin seeds (jeera)
Sendha namak (rock salt) – to taste
½ tsp black pepper powder
1 tsp lemon juice
Fresh coriander leaves – chopped
Directions
- Boil the sweet potatoes until soft, peel, and cut into cubes.
- Heat ghee in a pan and add cumin seeds. Let them crackle.
- Add green chilies and sauté for a few seconds.
- Toss in the cubed sweet potatoes, sprinkle sendha namak and black pepper.
- Stir fry for 3–4 minutes until slightly golden.
- Switch off the flame, drizzle lemon juice, and garnish with fresh coriander.
