Ingredients

  • For the Dough (Chakali Atta Mix)
  • 1 cup rice flour

  • ½ cup besan (gram flour) – for soft texture

  • ½ cup wheat flour (aate ki chakli) – adds a nutty flavor

  • 2 tbsp chakali atta (optional store-bought mix for extra crispness)

  • 1 tsp white sesame seeds

  • 1 tsp carom seeds (ajwain)

  • ½ tsp turmeric powder

  • 1 tsp red chili powder

  • 2 tbsp hot ghee or butter

  • Salt to taste

  • Water (as required for kneading)

  • Oil for deep frying

Directions

  • Mix the Dry Ingredients
  • In a mixing bowl, combine rice flour, besan, aate ka atta, chakali atta, sesame seeds, ajwain, turmeric, chili powder and salt.
  • Add Ghee and Knead
  • Pour hot ghee over the mixture and rub it in with your fingers until crumbly. Gradually add water and knead into a soft, non-sticky dough.
  • Shape the Chakli
  • Fill the dough into a chakli maker fitted with a star-shaped nozzle. On butter paper, pipe spirals carefully (around 2–3 turns per chakli).
  • Fry to Golden Perfection
  • Heat oil on medium flame. Slide in the shaped chaklis gently and fry until golden brown and crisp. Drain on tissue paper.
