Ingredients for Milk Cake Sweet

  • 1 liter full-fat milk

  • 1 tbsp lemon juice (or vinegar) – to curdle milk

  • ½ cup sugar

  • 2 tbsp ghee

  • ¼ tsp cardamom powder

  • 1 tsp rose water (optional)

  • Chopped pistachios or almonds for garnish

How to Make Milk Cake at Home

  • Boil the Milk
  • In a heavy-bottomed kadhai, boil milk on medium heat until it reduces slightly. Keep stirring to avoid burning.
  • Curdle It Slightly
  • Add lemon juice little by little and mix gently until the milk curdles slightly and you see soft granules forming (we don’t want full paneer).
  • Add Sugar and Ghee
  • Once you see a grainy texture, add sugar and ghee. Cook on low flame until the mixture starts to leave the sides of the pan and becomes thick and sticky.
  • Set and Cool
  • Grease a tray with ghee, pour the mixture, and press lightly. Let it rest for a few hours to set. Cut into squares or diamond shapes.
  • Garnish and Serve
  • Top with chopped nuts or a saffron strand for that authentic halwai touch!
