1 liter full-fat milk
1 tbsp lemon juice (or vinegar) – to curdle milk
½ cup sugar
2 tbsp ghee
¼ tsp cardamom powder
1 tsp rose water (optional)
Chopped pistachios or almonds for garnish
How to Make Milk Cake at Home
- Boil the Milk
- In a heavy-bottomed kadhai, boil milk on medium heat until it reduces slightly. Keep stirring to avoid burning.
- Curdle It Slightly
- Add lemon juice little by little and mix gently until the milk curdles slightly and you see soft granules forming (we don’t want full paneer).
- Add Sugar and Ghee
- Once you see a grainy texture, add sugar and ghee. Cook on low flame until the mixture starts to leave the sides of the pan and becomes thick and sticky.
- Set and Cool
- Grease a tray with ghee, pour the mixture, and press lightly. Let it rest for a few hours to set. Cut into squares or diamond shapes.
- Garnish and Serve
- Top with chopped nuts or a saffron strand for that authentic halwai touch!
