Ingredients

  • 1 cup yellow moong dal (split green gram), soaked for 2–3 hours

  • 1-inch ginger

  • 1 green chilli (optional)

  • Salt to taste

  • ¼ tsp turmeric

  • ½ tsp cumin seeds

  • ¼ cup finely chopped onion

  • ¼ cup grated carrot

  • 2 tbsp coriander leaves, chopped

  • Oil or ghee for cooking

Directions

  • Wash and soak moong dal for at least 2 hours. Drain the water.
  • In a blender, grind soaked dal with ginger, green chilli, cumin seeds, and 2–3 tbsp water. Make a smooth, pourable batter.
  • Transfer batter to a bowl and mix in turmeric, salt, onion, carrot, and coriander leaves.
  • Heat a non-stick or iron tawa. Pour a ladleful of batter and spread like a pancake.
  • Drizzle a few drops of oil/ghee around the chilla. Cook on medium heat until golden on both sides.
  • Serve hot with green chutney or curd.

Tips for Perfect Chillas

  • Always cook on medium heat to get crispy edges and even cooking.
  • You can also add spinach, beetroot, or paneer for variations.
  • Leftover batter can be stored in the fridge for a day.
