- For the Dough
Whole wheat flour (atta) – 2 cups
Salt – a pinch
Oil – 1 tablespoon
Water – as required
- For Matar Stuffing
Green peas (fresh or frozen) – 1 cup
Green chilies – 1–2 (finely chopped)
Ginger – 1 teaspoon (grated)
Cumin seeds – ½ teaspoon
Garam masala – ½ teaspoon
Salt – to taste
Oil – 1 teaspoon
Directions
- Prepare the Matar Filling
- Grind green peas, green chilies, ginger, salt and cumin seeds into a coarse mixture.
- Heat oil in a pan, add the mixture and cook until moisture evaporates. Add garam masala, mix well and let it cool.
- Prepare the Dough
- In a bowl, mix wheat flour, salt, oil and water to make a firm dough.
- Cover and rest for 10–15 minutes.
- Stuff the Puris
- Divide the dough into small balls. Flatten slightly, place a spoonful of matar stuffing in the center, seal properly and gently roll.
- Fry the Puris
- Heat oil on medium flame. Fry the puris until they puff up and turn golden brown on both sides.
- Remove and drain excess oil.
- Your matar stuffed puri is ready to serve hot!
