Ingredients

  • 1 cup sabudana (soaked for 4–5 hours)

  • 2 medium boiled potatoes (mashed)

  • 2 green chilies (finely chopped)

  • 1 tsp grated ginger

  • ½ cup roasted peanuts (crushed)

  • ½ tsp cumin seeds

  • Sendha namak (as per taste)

  • Fresh coriander leaves (chopped)

  • Oil (for deep frying) or ghee (for shallow frying)

Directions

  • Prepare the Mixture
  • In a bowl, combine soaked sabudana, boiled potatoes, peanuts, green chili, ginger, cumin, coriander, and sendha namak.
  • Mix well and form into small round patties.
  • Fry or Air Fry
  • For Crispy Sabudana Vada (Traditional): Heat oil and deep fry until golden brown and crunchy.
  • For Air Fryer Sabudana Vada (Healthy): Brush vadas with little oil, place in air fryer at 180°C for 15–18 minutes until crisp.
