Ingredients

  • 1 cup samak rice (sama ke chawal)

  • 2 medium-sized potatoes, chopped

  • 1 green chili, finely chopped

  • 1 tsp grated ginger

  • 1 tsp cumin seeds

  • 2 tbsp ghee or oil

  • 2 ½ cups water

  • Rock salt (sendha namak) as per taste

  • Fresh coriander leaves for garnish

Directions

  • Wash samak rice thoroughly and soak for 15 minutes.
  • Heat ghee in a kadhai or pressure cooker. Add cumin seeds and let them splutter.
  • Add chopped potatoes, green chili, and grated ginger. Sauté for 2–3 minutes.
  • Add soaked sama chawal and stir well.
  • Pour in water, add rock salt, and mix.
  • Cover and cook until the grains are soft and the khichdi has a creamy texture.
  • Garnish with fresh coriander leaves and serve hot.
