1 cup samak rice (sama ke chawal)
2 medium-sized potatoes, chopped
1 green chili, finely chopped
1 tsp grated ginger
1 tsp cumin seeds
2 tbsp ghee or oil
2 ½ cups water
Rock salt (sendha namak) as per taste
Fresh coriander leaves for garnish
Directions
- Wash samak rice thoroughly and soak for 15 minutes.
- Heat ghee in a kadhai or pressure cooker. Add cumin seeds and let them splutter.
- Add chopped potatoes, green chili, and grated ginger. Sauté for 2–3 minutes.
- Add soaked sama chawal and stir well.
- Pour in water, add rock salt, and mix.
- Cover and cook until the grains are soft and the khichdi has a creamy texture.
- Garnish with fresh coriander leaves and serve hot.
