Ingredients

  • For Layering
  • 10–12 flat puris (also called papdis)

  • 1 small boiled potato (peeled and mashed)

  • ½ small onion (finely chopped)

  • ½ small tomato (finely chopped)

  • ¼ cup moong sprouts (boiled – optional)

  • 2 tbsp chopped coriander leaves

  • ½ cup nylon sev (the finer, the better!)

  • Chutney
  • 3 tbsp tamarind chutney (imli ki meethi chutney)

  • 2 tbsp green chutney (coriander & mint)

  • 1 tbsp garlic chutney (optional but gives a spicy kick)

  • Spices to Sprinkle
  • 1 tsp chaat masala

  • ½ tsp roasted cumin powder

  • ½ tsp red chili powder

  • Black salt to taste

Directions

  • Lay the Base
  • Place the puris neatly on a serving plate. If they’re a bit uneven, gently flatten them with a spoon so they can hold the toppings better.
  • Add Potatoes and Sprouts
  • Add a small spoon of mashed potato to each puri. You can also add a few moong sprouts for an extra punch of protein and texture.
  • Top with Veggies
  • Sprinkle chopped onions and tomatoes on top of the potatoes.
  • Drizzle the Chutneys
  • Now comes the flavor magic! Add a few drops of tamarind chutney, green chutney, and garlic chutney over each puri. Adjust quantity as per your spice and sweetness preference.
  • Season It Right
  • Sprinkle chaat masala, roasted cumin powder, red chili powder, and a little black salt over the puris.
  • Garnish with Sev
  • Add a generous amount of nylon sev on top of each puri. This gives it the classic crunch and street-style touch.
  • Serve Fresh
  • Garnish with fresh coriander leaves and serve immediately while the puris are still crisp.

  • You can add finely chopped raw mango or pomegranate seeds for a fruity twist.
  • Adjust the chutneys to make it more sweet or spicy as per your taste.
