How to Make Undhiyu (Step-by-Step)
- Prepare the Masala
- Blend coriander, coconut, garlic, sesame seeds, spices, lemon juice, and oil to create a thick masala paste.
- Stuff the Vegetables
- Slit brinjals, raw bananas, baby potatoes, and stuff them generously with the masala.
- Cook the Muthiya
- Make methi muthiya using besan, methi, spices, and steam or fry them.
- Layer the Undhiyu
- Heat oil, add surti papdi and tuvar beans first. Then add stuffed veggies, purple yam, and sweet potatoes.
- Slow Cook
- Cover and cook on low flame so the flavors blend beautifully.
